Herby Garden Pasta

Ingredients:

pasta of your choice - works well with shell shapes - we usually use a 500g. bag for all four of us which leaves left overs for the next day

a little olive oil

1 onion or leek, finely chopped

a couple of cloves of crushed garlic

1 (about 400g) tin of chopped tomatoes

1 tablespoon of tomato puree

fresh herbs, chopped or ripped - weve been using lovage, sage and mint but use whatever you have or like

seasalt to taste

chopped parsley to sprinkle on top (optional)

Cook the pasta according to the packet instructions. While it's cooking prepare the sauce: fry the onion and garlic in the oil for a few minutes then add the tomatoes and puree and stir well. Add the chopped herbs and salt and simmer for a few minutes until cooked. Once the pasta is ready, drain and stir in the sauce and sprinkle the parsley - enjoy in the sun (optimism).

Variations: Add some soya mince, mushrooms or beans to the sauce.
